Tasty Thakkali Thokku (Tomato curry)
Ingredients:
Chopped medium sized onions - 3
Chopped medium sized tomatoes - 2
Garlic crushed - 10 cloves / I have used garlic paste - 1 tbsp
Tempering:
Oil - 4 tbsp
Mustard seeds - 1 tsp
Fennel seeds - ½ tsp
Curry leaves - 1 sprig
Spice powders:
Turmeric powder - ½ tsp
Red chilli powder - 1 tbsp
Coriander powder - 2 tbsp
Kashmiri chilli powder - 1 tbsp
Salt - to taste
Coriander leaves - to garnish
Instructions:
Add 4 tbsp of oil, temper with mustard, fennel and curry leaves. Add in the onions and saute till soft.
Add the garlic paste and saute till the raw smell of the garlic goes off.
Add in the tomatoes and saute till mushy.
Add in all the spice powders.
Give a quick stir and add in about ¾ cup of hot water.
Once the water boils, pressure cook it for 2 whistles.
Tomato thokku is ready to be served with Idly, Dosa, Chapathi, Poori and rice.
