Rava Kichadi
Ingredients:
Sooji / Rava - 1 cup
Mix vegetables (Carrot, Beans, Green peas) - ½ cup
Onion Sliced lengthwise - 1
Green Chilly - 3 (Adjust according to spiciness)
Garlic Sliced - 5 pods
Salt - To taste
Turmeric powder - ½ tsp
Water - ¼ cup for cooking vegetables + 2 ¼ cup
To temper
Oil - 5 tbsp
Fennel seeds - ½ tsp
Cloves - 2
Cinnamon - 3 small pieces
Bayleaf - 1
Ghee - 1 tbsp
Coriander leaves - For Garnishing
Instructions:
Heat Oil in a thick bottom pan/kadai. Add in items in the to temper table
Once they crackle, add onion, garlic and green chilli and saute until onion is cooked
Add the vegetables, salt and turmeric. Give a quick stir and add ¼ cup water for the vegetables to cook. Cover and cook in slow flame until all the water is absorbed and the veggies are cooked.
Add 2 ¼ cups of water to the kadai/pan and bring it to boil. Check for salt at this stage. It should be slightly salty. Once it boils, carefully add the sooji , mix without lumps.
Simmer and cook covered for 2 -3 minutes. Stir in between for the sooji to cook evenly
Drizzle Generous amount of ghee, garnish with coriander leaves and Serve.
