Rava Kichadi



Ingredients:



Sooji / Rava - 1 cup

Mix vegetables (Carrot, Beans, Green peas) - ½ cup

Onion Sliced lengthwise - 1

Green Chilly - 3 (Adjust according to spiciness)

Garlic Sliced - 5 pods

Salt - To taste

Turmeric powder - ½ tsp

Water - ¼ cup for cooking vegetables + 2 ¼ cup


To temper


Oil - 5 tbsp

Fennel seeds - ½ tsp

Cloves - 2

Cinnamon - 3 small pieces

Bayleaf - 1


Ghee - 1 tbsp

Coriander leaves - For Garnishing


Instructions:


  1. Heat Oil in a thick bottom pan/kadai. Add in items in the to temper table

  1. Once they crackle, add onion, garlic and green chilli and saute until onion is cooked

  1. Add the vegetables, salt and turmeric. Give a quick stir and add ¼ cup water for the vegetables to cook. Cover and cook in slow flame until all the water is absorbed and the veggies are cooked.

  1. Add 2 ¼ cups of water to the kadai/pan and bring it to boil. Check for salt at this stage. It should be slightly salty. Once it boils, carefully add the sooji , mix without lumps. 

  1. Simmer and cook covered for 2 -3 minutes. Stir in between for the sooji to cook evenly

  1. Drizzle Generous amount of ghee, garnish with coriander leaves and Serve.
