One Pot Sambar Rice



Ingredients:


Rice + Toor Dal - ¾ cup + ¼ cup

Water - 5 cups

Ratio of Rice+Dal to water is 1:5

Mixed Vegetables - 1 ½ cups (Preferably drumstick(Murungakai), broadbeans(Avarakkai), Brinjal (Kathirikkai), Raddish (Mullangi), We can also use any other veggies with which we can make sambar. I have used Carrot, Beans, Peas, Cabbage, Raddish, bottlegourd)

Shallots - 15 - 20 or Medium size Onion - 1

Tomato - 2 Medium (We do not use tamarind for this recipe, so Tomato is the only source of Tanginess.

Curry Leaves

Coriander


Tempering:

Oil - 5 tbsp

Mustard

Urad dal

Fenugreek

Cumin Seeds

Hing / Asafoetida


Salt

Chilli powder - 1 tbsp

Sambar powder - 1 tbsp

Turmeric powder - ½ tsp


Optional but adds lot of flavour:

Ghee - 2 tbsp

Coriander




Method


  1. Wash and soak Rice and Toor Dal for atleast 1 hour

  1. In a pressure cooker, add oil all the items under to temper table , curry leaves, and shallots. Cook until transparent.


  1. Add in all the veggies and spice powders and give it a quick mix.


  1. Add 5 cups of water, soaked and drained Rice + Dal.

  1. Close the lid and pressure cook for 2 whistles in low flame. This might approximately take 20-25 minutes. Once the pressure releases, open the pressure cooker and drizzle with ghee and coriander leaves.

  1. Mix well and the rice + Dal will be in a mashy consistency.


  1. Serve with pickle and fryums or Potato fry
