Verkadalai Vendakkai poriyal




Ingredients:


Vendakkai - 300 gms

Onion - 2 medium finely chopped

Garlic - 15 cloves crushed

Chilli + Coriander Powder - 2 tbsp

Turmeric powder - ½ tsp

Salt - To Taste

Oil - 5 tbsp

Peanuts / Verkadalai - To taste


Instructions:



1. Roast a few peanuts in oil and keep aside


2. Add a little more oil to the same pan, splutter some mustard seeds , crushed garlic and saute till golden

3. Add chopped onions and saute till soft

4. Add chopped ladys finger, salt, turmeric powder, chilli powder + Coriander powder and 2 -3 tbsp oil

5. Mix the masala well. Cover and cook in low flame for 5-7 minutes.

6. Once the lady’s finger is cooked, add 1 tbsp of oil and roast in low-medium flame till it becomes golden.

7. Turn off the stove once oil oozes out.


8. Add roasted peanuts and give it a quick stir.
