Mixed Vegetable Curry
Mix Veg Curry
Ingredients:
Butter / Oil - 2 tbsp / 4 tbsp
Vegetables of your choice - 2 cups
Onion Medium - 2
Tomato - 1 medium
Ginger Garlic - Crushed - 1 tbsp
Chilli powder - 1/2 tbsp (adjust)
Coriander powder - 1 tbsp
Turmeric powder - 1/4 tsp
Garam masala - 2 tsp
Cumin powder - 1 tsp
Salt - as per taste
Instructions:
1. Add butter to a pan
2. Add Onion, Crushed Ginger and garlic and saute till soft.
3. Add vegetables which need a longer cooking time, add little salt, a sprinkle of water and cover till cooked.
4. Add the remaining vegetables and all the spice powders.
5. Mix well and add a little bit of water. Cover and cook for 10 minutes.
6. If you are planning to add paneer, add in at this stage.
7. Mix well, add a little bit of butter and garnish with coriander leaves.
