Carrot Beans Kootu
Ingredients:
Carrot Chopped - ½ cup
Beans Chopped - ½ cup
Peas - ¼ cup
Onion - 1 medium chopped
Garlic - 5-6 pods
Green chillies - 2
Dry red chillies - 2 (Adjust according to spice)
Ghee
To temper:
Oil - 3 tbsp
Mustard seeds - ½ tsp
Urad Dal - ¼ tsp
Instructions:
1. Add oil to a pressure cooker and temper with mustard seeds and urad dal
2. Add onions and garlic and saute for a min
3. Add green chillies, red chillies, carrot, beans and peas.
4. Add turmeric powder, salt and water. Pressure cook for 3 whistles.
5. Add cooked toor dal and adjust the consistency by adding little water.
6. Top it off with a drizzle of ghee and boil for 2 mins. Garnish with coriander leaves and serve.
