Spicy Kovakkai Fry / Ivy gourd fry/ Tindora Fry


Ingredients:


  1. Kovakkai / Tindora / Ivy gourd - 250 gms


To make Masala paste:


  1. Oil - 2tbsp

  2. Chilli powder ¾ tsp

  3. Coriander powder - 1 tsp

  4. Garam masala - ½ tsp

  5. Turmeric powder - ½ tsp

  6. Salt - as reqired


Instructions:


  1. Wash and slit the kovakkai length wise.

    1. Tip: Use only the vegetable which has a white or pale red inner part. Do not use the overly ripe ones for the fry. It will make the fry taste sour.

  1. Make a paste out of the items listed under the table.

  1. Add the kovakkai pieces to the paste and coat evenly.

  1. Marinade for 30 minutes.

  2. After 30 minutes, spread the kovakkai on a pan , cook it covered in low flame for 15 minutes without adding any water.


  1. After 15 mins, remove the lid, add 2-3 tbp of oil and fry till golden in medium flame.

  2. Kovakkai fry ready to serve.
