Quick Veg Kurma
Ingredients
Oil - 2 tbsp
Cinnamon - 2 small pieces
Cloves - 2
Bay leaf - 1
Fennel seeds - 1tsp
Onion - 1 medium sliced
Ginger garlic paste - 1 tbsp
Chopped veggies(carrot, beans, peas, cauliflower, potato) - 1 cup
Chilli powder + Coriander powder - 2 tsp
Turmeric powder - ¼ tsp
Salt - as required
To grind
Dessicated Coconut - 3 tbsp
Cashews - 5 (Optional)
Instructions:
Heat oil in a pressure cooker. Add cinnamon, cloves, bay leaf and fennel seeds. Saute for a few seconds.
Add in the onions, ginger garlic paste and saute for 2 mins.
Add the chopped veggies, spice powders and salt
Add ½ cup water and pressure cook for 3 whistles
In the meantime, make a paste with coconut and cashews
Once the pressure subsides, open the pressure cooker, add ½ cup water and boil for 2 - 3 mins.
Add the coconut cashew paste, ½ cup water (adjust to preferred consistency). Bring it to a boil and turn off the stove.
Garnish with coriander leaves(optional).
