Baby Potato Roast
Ingredients:
Baby potato - 15
Oil - 3 tbsp
Mustard-¼ tsp
Urad dal - ¼ tsp
Jeera - ¼ tsp
Curry leaves - few
Garlic - 2 cloves (optional)
Chilli powder + coriander powder - 2 tsp (adjust)
Turmeric powder - ¼ tsp
Garam masala - ½ tsp
Salt - to taste
Instructions:
Boil baby potatoes, peel and cut them in half.
Add oil to a hot pan. Once oil is hot add mustard seeds, urad dal and Jeera
Throw in the curry leaves and garlic
Fry for a second and add half cup water
Add chilli powder, turmeric powder, garam masala and salt.
Once water boils add the baby potatoes and keep the pan on high flame
The potatoes will begin to absorb water little by little
Once all water is absorbed, add extra oil and roast till crispy
Optional: Add idly podi to the fried potatoes for an extra crunch
