Madras Vadacurry
My husband is a huge fan of Vadacurry , particularly the one with cashews. Here is a quick and tasty recipe with leftover masala vadas.
Vadacurry goes well with Idly, Dosa, Chapathi and Poori
Ingredients
Masala vadas - 8
Onion - 1 medium
Tomato - 1 medium
Crushed ginger - 1/2 inch
Crushed garlic - 6 cloves
Turmeric powder - 1/4 tsp
Chilli powder + coriander powder - 1tsp+1tsp
Salt to taste
Coriander leaves
To Temper:
Oil - 5 tbsp
Bay leaf - 1
Cloves - 3
Cinnamon - few small pieces
Curry leaves - 1 sprig
Green chilli - 1 slit
Cashews - 6-7 halves
Instructions:
1. To a hot pan add oil and all items under temper. Saute till the cashews are brown
2. Throw in chopped onions, green chilli, crushed ginger and garlic and saute till the raw smell goes away.
3. Add in tomatoes and cook till mushy.
4. Add in the spice powders, salt and saute for a minute.
5. Add 1/2 cup of of water and boil off till raw smell goes.
6. Add crushed vadas and give a quick stir and cook for a couple of more minutes
7. Garnish with coriander leaves and serve.
